Chinese take on the traditional French roulé

Eating is central to Chinese culture and so is its dining etiquette. Living in Vancouver where the world’s largest Asian community lives outside of Asia, we noticed stupefying similarities with French gastronomy.

Given French meals’ quintessential social and sharing traits and the Chinese communal meal times too, we wanted to highlight these culinary similarities through comparable dishes found in the two cultures.

Chinese people are avid eaters of pastries of different kinds including "swiss rolls", the spongy cake usually filled with fruit pastes. Here is a take on a traditional French roulé, rolled sponge cake with a filling, with a Chinese twist: red bean paste and shrimp paste sprinkled with dried shredded pork.
