Why did you decide to go study pastry in France, any specific "Madeleine de Proust" moment?

Many of these wonderful moment are going into my upcoming book “The Measure of My Powers” published with Random House and launched Spring 2017! So it is a perfect time to ask. I had spent many years baking from home, selling at farmers markets and decided to go to France to indulge my passion for learning and pastry. I simply didn’t want to live my entire life without experiencing a life that gave me joy, of truly living life fully.

Of the foods you have tried while in France, which is your most memorable one and why?

I ate a pain au chocolat almost every morning and when I returned from France, I missed it so much that I tried to create my own, et voila, that is how Beaucoup began!

Your Paris Tours happen every January, March and September. For each month, where would you extend your stay somewhere else than Paris?

I am also a travel & food writer so I have gone to many other places, like Turkey and Spain. However, when I’m in Paris, I usually enjoy visiting Provence again, it’s one of my favourite places because it is so relaxed and pretty. I also love the food and antique markets there.

What is the most underrated culinary region in France?

I’m not sure I have traveled enough of France to know! I’m still learning!

Are you or your clients concerned about traveling to Paris following the recent events? What would you tell the ones intimidated?

Yes, a little. It was very new and this particular one was scary for me because it seemed like a normal residential neighbourhood, not a special event or a monument. However, I cannot stay away for too long and I tell most people who ask, that this is the time we are living in. For me, I am safe and follow my intuition and common sense, but I cannot stop living because of fear either. But I think this is important for each person to decide what they feel most comfortable doing too.

If you were a flavor, which one would it be?

Lemon: bright, fragrant, zesty, I can go in a lot of dishes and taste great, tough-skinned, and sometimes a bit sour.

If you were a smell, which one would it be?

I wear perfumes I buy from Paris almost every day. I would be perfume.

What is your favorite French word?

I have three:
1.Apte. Because of a friend, this word reminds me that sometimes, you may have the capability in your head, but you must also have it in your heart to be truly ready.
2.Épanouir. Someone used this word to describe me once and I agreed :)
3.Interdit. I like the way this word sounds when I say it.

What is your favorite French expression?

I just learned the word “Mec” and it made me laugh.

If you could have a "diner aux chandelles" with one French person, alive or dead, famous or not, who would it be?

Too hard to choose. Would be between MFK Fisher, Maya Angelou or Anais Nin.
